Using recipe v.1 with 25% whole wheat. Giusto’s ultimate performer. Autolyse started at 1:15pm. End of mix at 3:20pm.
Very nice crumb. I used tap water and it worked fine, so no need to use distilled water in the future. Hard and frequent stretch and fold early on.
